TONS of ads anymore is served locally from the website host or by directly addressing IPs, DNS blocking can't deal with any of those.
And ublock dosn't just block ads either, it also blocks local scripts and other nasties
Simple DNS blocking is works for some things but leave tons of cracks open still, should only ever be relied on if there is no other option (can't install proper blocking software, etc)

I use cloudflared on a pihole for DNS over HTTPS so I'm currently using 1.1.1.1. If 9.9.9.9 had a similar program, I'd be using them instead

Firefox + Cloudflare DNS over HTTPS (Options > Network Settings at bottom of that page > Choose DNS over HTTPS) works pretty good.
Go for 1.1.1.1 if you want systemwide and trust cloudflare.

I'm not the expert on this but they are the same, just that they use different port. Use DoH, Regular HTTPs connection is pretty secure for MITM attacks (from what I know, so far).

They are the same, but it is far harder to block DoH since it would basically mean no https either due to the shared port.

DoT and DoH are fairly similar in all around objective security though DoT is harder to differentiate from web traffic, so I prefer it.
