Better than anything with an Intel chip in it.

There are some good use cases. I use an old Raspberry Pi B+ to run a PiHole and a Raspberry Pi 3 to monitor air traffic and do grid computing.
Friend from college rigged together four SBCs into a proof of concept Beowulf cluster and ran MPI on it. There's a lot you can do.

Running an Odroid C2 and a RPi 2.

I used an RPi 2 a few years back as a desktop over the summer because my place was an oven and my regular PC was a spaceheater.

I've got a 64 running my SFTP server

I use it as my full desktop replacement. Any resources it lacks can be made up with cloud computing. I can play any game I want on it and also compile/render my video projects.
I don't understand why people cling on to their massive boxes of trash anymore.

I use mine as a wake on lan server for my 1GW desktop. Been trying to get it to work with Pi-hole but I can't get the web interface to nor 403 me every time I try to get in.
Also works as a VPN server.
