Depends what you want to do. Just text? Voice and video?
Options include Signal ( requires some sort of phone number which is a drop in replacement for mobile / sms types ) , Wire, or Matrix.org (riot.im is most popular client ) . These three are the biggest and easiest to use full featured type with media support too. Matrix is even federated and all are open source.
If it's just text ( or it may be situational to get voice or vid working ) then XMPP w/encryption , Jami, Briar, Ricochet and others are also available and open source.
