Snow Leopard had tons of bugs, especially being a dual-architecture system. I had Snow Leopard on my iBook G4 and PowerMac G5 (and the equivalent server version on my Xserve G5). It sucked until PPC was dead.

It's funny how people always say a different version of OS X/macOS was the most stable.
In truth they're all pretty solid, it just depends on the other software you use on them.
For years audio producers would stay on Snow Leopard because they were terrified some plugin or some weird version of Logic would stop working. This doesn't really happen anymore, Mojave works fantastically with every piece of pro audio software and hardware out there.
That said, I've been receiving emails from audio companies over the past week saying "don't upgrade to Catalina yet!", but this is pretty normal these days, and within a month or two they'll have their shit together.

I've been using a T2 Macbook Pro since they came out with multiple USB audio devices, no issues whatsoever.

It's easy, the tough problem is compatibility. Soundtoys' stuff only work on Capitan and there's not an cracked update for newer versions.
