gigabyte master in my opinion is the best board of x570, but it's quite a lot and overkill for a 3600. don't listen to me, some other user can help I hope.
I want to build a server for NAS purposes and ability to offload encoding/rendering work to the server. My current gaming machine is an i7-9700k and RTX2070 Super and while capable, I don't like the entire system being locked at 100% usage when rendering or encoding. Is the R7-3700X a good option? I know it's a server I still want it to be relatively power efficient and the 65w tdp seems nice.

Any QLC based drives are completely fine if you intend to only write to them once in a while. My friend bought an Intel 660p QLC 2TB NVME drive solely for his game drive. Loading speed times are fantastic but sustained writes to the drive (transferring 50+GB at a time for instance) will result in low performance as it runs out of it's own cache. However for the price, you can get the Sabrent Rocket drives which are far superior TLC based for the same price.

RAM can go as fast as possible as long as you lower the timings enough right? e.g. default 3000 cl15 can even go to 4000 cl20? Also, would it be better to get something like 3333 CL16, or 3200 CL16 that has a better die? And ballistix sport vs hyperx fury/predator?

The 9900k will age far better than the 9700k. Get 2x16GB instead of 4x8GB. Then you can always add 2 more sticks later if you'd like. Dropped the RAM from 3600MHz to 3200MHz because performance increase from RAM on an Intel system is minimal at best. Dropped the 2080 Super down to the 2070 Super as it's not worth the increase.

Whats up just sharing Watercooled 9900k in a Lian Li PC o11 Dynamic case, xe360 60mm radiator running push/pull on the side. Fucked up cause I was going to use red dragon vega 56 in this rig from my previous one but it doesn't even remotely fit cause of that ddc pump at the bottom. Going to get a vertical mount later and move pump to bottom of case for clearance, red dragon v56 is a very long card. Pretty sure I'm just going to waterblock a 2080ti later. So yeah pic related is a watercooled 9900k with 32gb ram, nvme, and a god damn'd gtx 970.
I do a lot of video editing/encoding/rendering off of my SSD so a shit loads of writes. If longevity is on your mind, get the name brands. Samsung, Crucial, Intel, Sabrent. The last one is an up and comer but giving everyone a run for their money.

In my defense it is a kit from ekwb, because I was a bit spooked and just wanted to do this build. But now I realize that is fucking idiot proof if you're using soft tubing. I'm going to add another 240 radiator when I waterblock the gpu and probably a d5 pump instead of ddc. I have years of experience working with hydraulics/mechanical things so I'm not sure how much that confidence is translating over compared to someone thats never fitted some hose for oil, but it is really simple.
