Barbecue is smoking tough, kind of flavorless meat over a long period of time. The incomplete combustion products in the smoke react with the proteins and forms flavorful compounds and the broken down fibers give the meat a soft and gooey texture.

BBQ here is about how long it's smoked, what it's rubbed with, the sauces etc. It's a lot different than just grilling something it can be like a 10 hour process in some restaurants
