Why did it take a Jap to identify umami?

They probably know since forever but don't come up with the word for it. But seriously using the word umami (deliciousness) to describe one of the basic taste is fucking stupid. Maybe a reason no one come up with the word until very recently

Of course they knew about it, they could taste it. But it's the fact that they never attempted to identify or classify it.

They still don't have a better word for it than the Japanese though. Savory isn't exactly any different from umami.
