Learn standard arabic first, it's what we use in written and education. then learn a dialect on your choice based on personal interest. if you want to go to egypt for example, then learn egyptian dialect, lebanon then learn lebanese dialect etc. but the written arabic is the same everywhere, it's only spoken that's different.

you need to learn the alphabet well first before you start ("Alif Baa: an introduction to arabic letters" is popularly used in university courses.)then go for:
1-Madinah series, which is used at the Islamic University in Madinah and very beginner friendly(you just need to know the alphabet). It consists of three textbooks in Arabic, along with three in English explaining the grammar of each lesson, and an answer key. There's also a lot of complementary material in form of grammar summaries etc. Everything can be found for free(no copyright) at

2-Simplified Arabic by Arthur Upson. A great book available for free(copyright expired). It's layed out in terms of 200 chapters each accompinied by translation excercies with answer keys. Ideal for self studying. It can be found at archive.org/details/arabicsimplified00upsouoft
They are aimed at someone who knows the Arabic script but not anything else. After it you should be at a level where you can start studying Arabic in Arabic.
