To be fair, this is the poorest of the poor foods, and it's wet-cured, which isn't that common aside from ham.
Portuguese (and Spanish and Italian and French) charcuterie knocks any German equivalent out of the water.

That's because "poorfag food" that lived through the generations was the only thing worth keeping.
Most meat-based dishes were reserved for festivities for most of the population, and the weeks that followed it (to use the meat of the killed animal). Everyday poorfag food was just cabbage soup and bones.
