I fucking hate sauce on my food. On my tortas, tacos, gorditas, etc. I don't understand why this country has an obsession for putting spicy sauce on fucking everything. It takes away the natural flavor of things.

This man knows what's up. Spicy components of food aren't supposed to be overpowering or the dominant flavor in classical mesoamerican cooking. They're supposed to be used in small amounts to compliment the natural flavors and be used with salt and lime in equally small amounts to bring out what would best be equated as naturally occurring Umami in traditionally low carb, high vegetable, high protein diets that Mesoamericans lived off of.
