I'm not sure, maybe it has something to do with the fact they didn't surrender despite overwhelming odds?

Losing battles are nice, sometimes.

Dying gloriously > winning > dying ingloriously > surrendering

Horribly outnumbered and besieged held out for a while but ultimately were killed. Santa Anna's cruelty (killing everyone) inspired a lot of people to join the revolution's Texian army and seek vengence on him.

Why does the South care so much about a war they lost?

Provides incentive to win the next ome

>Weren't even killed, were taken as prisoners
Honestly the best part.

>Provides incentive to win the next ome
Exactly

>The Mexican army was taken by surprise, and the Battle of San Jacinto was essentially over after 18 minutes. During the fighting, many of the Texian soldiers repeatedly cried "Remember the Alamo!" as they slaughtered fleeing Mexican troops.[153] Santa Anna was captured the following day, and reportedly told Houston: "That man may consider himself born to no common destiny who has conquered the Napoleon of the West. And now it remains for him to be generous to the vanquished." Houston replied, "You should have remembered that at the Alamo"
