linguistically they're still different. norwegian is west scandinavian, along with faroese and icelandic while swedish and danish are east scandinavian

They could be classified as dialects, but as I said, it's a politic choice.

"A language is a dialect with an army and a navy". They're considered separate languages because they're spoken in separate countries. If Southern Sweden (Skåne) or Central Norway (Tröndelag) were independent countries, their dialects would be languages. Easy as that, it's mostly politics, but it's still enough linguistic difference between them. Written Norwegian is closer to Danish, but spoken Norwegian is closer to Swedish. It's not like Romanian/Moldovan or Hindi/Urdu which is basically the same language (except for the alphabet in the case of the latter).

No. Italian, French and Portuguese are not at all mutually intelligible. They are distant, separate languages like Dutch and English, or German and Norwegian. Similar vocabulary but you need to study the other language in order to understand more than 30% of it.

Spanish and Italian are closer than other combinations of Romance languages (maybe 40%), but they are still not mutually intelligible to the degree for instance Norwegian and Swedish are.

In an ideal world different Chinese "dialects" that are mutually unintelligible should be considered separate languages, however in the real world the distinction between languages and dialects is merely a function of politics. Politics is the reason why 10+ Italic languages that are mutually unintelligible with Italian are considered "Italian dialects" rather than proper languages. Politics is the reason why Danish and Norwegian are considered separate languages.

People living in southern Sweden generally have an easier time with Danish while others living in the West have an easier time with Norwegian. It's still sort of difficult to understand all of it but you get enough to where you can make out the gaps.
