I'd like to visit Mexico to see the old Mayan stuff. Can any Mexibros tell me if those areas are safe? IIRC it's pretty far from cartel country, and I don't use drugs so I cant see myself getting in much trouble.

I live in Querétaro. it's not that bad I guess, but at the end of the day it's still Mexico. You'll see a contrast between the poor majority and the middle-high class minority (in the people and in the areas of the cities) and the rule of law is always secondary. You can live comfortably if you take precautions and don't show your wealth.

Since you are a foreigner you'll stick out, so trying to keep a low profile will be a bit tougher, unfortunately.
Don't drink tap water. Buy those 20L jugs of purified water. Once empty, you can change them at a convenience store for a full one for less than $2 USD.
Also, take it slowly with local food, especially street food. You'll have to eat it sparingly until you become used to it, otherwise you could get sick.

The first jug you buy is more expensive, like $4-5 USD, I think? but once you return it, the "refills" are less than $2. Food prices vary but they are low, generally. Obviously there are a range of restaurants with different prices like everywhere else. Supermarket food is cheap compared to European prices I'm sure. Of course, imported things are more expensive.
