It's pickled and fermented cabbage. It tastes like other pickled things. You put it on meat or fry it with potatoes and eggs.

It is called zuurkool here. Tastes great. We eat it here in combination with rookworst and mashed potato.

You eat it with meat normally some roast or bigger stuff like Schäufele/Haxe with potato dumplings.
What I also love is pic related. You cook the sausage and the Kassler (cured meat) in the Sauerkraut and as a side you eat mashed potatos.

what the difference between sauerkraut and rotkohl? my cousin-in-law makes some sort of purple pickled cabbages

Sauerkraut is the cabbage, dog.

we call it chucrut here and the only way to get it is jarred or canned at the imported aisle of the supermarket or at specialty gourmet stores

rotkohl isnt fermented, its just cooked with vinegar
