Wow!! Σr(‘Д‘n) In Japan, both raw rahmen noodles and boiled ones are sold in shops So, most Japanese buy ramen noodles in shops In German, aren't raw rahmen noodles sold?
I have a hard time finding ramen in Berlin that is not instant ramen. And what I found didn't taste good. Right now I use normal flour and natrium carbonate, but I want to experiment with higher gluten content and stronger alkali.
Making noodles is fun when you have a machine like . You should try it :)
Thank you But, in Japan, we can buy delicious raw rahmen noodle with local flavors gaining popularity all over Japan, so I think that I won't buy that machine. :3
By the way, Germans have high ability to make delicious food, so I think that you Germans can make very delicious ramen noodles. As for soup, since I've heard that 豚骨(Tonkotsu) soup is close to soup of German traditional dishes, I think Germans can also make delicious rahmen soup too.
Tonkotsu is the best soup but at home I make soup based on chicken bones (Keikotsu?!).

I once had really excellent 鶏ガララーメン in Kyoto, but when I went to the same place two years later it was sold to some muslims and the quality was crap. It's not listed on tabelog anymore, so hopefully they had to close.

I know that ramen restaurant "あやむや" is a halal resutaurant so that restaurant is popular to Islamic forigners who visit to Kyoto. For Muslim cuisine, the taste of ramen is deteriorated because there are restrictions on the ingredients that can be used あやむや has several stores in Kyoto and Osaka, and it is gradually increasing As the number of Muslim tourists and immigrants is on the rise, the number of あやむや will increase in the future...
