There is a castle in France being built entirely from scratch using only materials available during medieval times. It's actually almost finished, been going on for 25 years iirc. It's being used as a way to train students on how to do restoration repairs on (real) castles.

This is a great castle. I visited it a few years ago but a third of it was under renovation. Looks nice when it's foggy too. A bit out of the ways from the major tourist routes though.
