Seller and buyer agree on price. Buyer sends payment. Payment is held in PayFair smart contract until buyer confirms receipt of purchased item. Once the buyer confirms receipt, the smart contract releases the payment to the buyer. If there is a dispute, either party raises a claim and it is passed to an anonymous escrow node. Three escrow nodes in a row have to side with the buyer or seller - if the chain is broken it starts again. The smart contract will then release the payment to whichever party the escrow nodes side with.

How? Where does he send it? How does the connection to fiat work?
Seller would place the crypto in escrow and then the buyer settles with the seller off chain and then the crypto is released from the escrow to the buyer. So you can agree to whatever format of transfer whether you use SEPA or TransferWise or whatever.
