There are various why Israel insists on keeping portions of the West Bank and there are various opinions within Israel about this matter.
As I see it, the #1 reason is security. Israel is a small country, with most of its population residing in its central district which is few miles in its width. In other words, about 3 to 4 million Israelis live in an area no larger than Luxembourg. This is also where most of Israel's industry and economics reside and where the international airport resides.The mountainous West Bank overlooks this area. If the Arabs will manage to establish a rocket launching infrastructure there. like they did in Lebanon or Gaza, that would be the end of Israel. As they could bomb the narrow strip of land which is Central Israel non-stop.
A second reason would be, that the West Bank was never part of a Palestinian country to begin with. When Israel captured the territory in 1967 it captured from Jordan, which annexed it by itself in 1950. The 1967 war was a defensive war for Israel, therefore Israelis see the territories captured in this war as territories liberated in a defensive war. Add that to the West Bank being part of the historical Biblical Jewish homeland and you will get why many Jews decide to reside there.
