Peru and Mexico most def. Peru has asian, native, and med fusion. Mexico has the richest native cuisine and lots if unique influence, like tacos al pastor, and cream and cheese from euros.

They have great seafood and lots of japanese immigrants which helped with fusion. Think octopus and fish. They specialize in Ceviche. Also they love med influence so they love their homemade aolis, olives, and stews. Potatoes come from Peru, also Quinoa. Also they love heart meat, chicken with spice rubs, and Causa, which is mashed potatoes and meat usually tuna
