I'm sorry for the confusion, upon a closer look it's actually fine in both ways you are sort of correct that N-ar is third person...BUT!
N-aș is, like you said, correct if you are talking about yourself specifically, which in this case you are hoever N-ar is used when you are talking ~rhetorically, when you are saying in the general sense that it wouldn't have been a good idea to eat a third waffle in plain speech, people use either, some more the rhetorical form, I don't really know why
you can sort of twist the person you're referring to by using the verb, if you go with N-ar (excuse my utter lack of diacritics for a second): N-ar fi trebuit sa _mananc_ un al treilea waffle -> mananc -> first person = eu -> Eu n-ar fi trebuit sa mananc un al treielea waffle also fine is N-ar fi trebuit sa _manance_ un al treilea waffle -> manance -> third person = el/ea -> El/Ea n-ar fi trebuit sa manance un al treilea waffle

I often struggle with the usage of had and have. I know had is used in the past perfect, when we describe something that had happened even before past events or for posession of something in the past. But why is it used here "We hadn't expected weather to be so bad"? What's the difference between this and "We didn't expect weather to be so bad"? I also was suprised by the sentence I saw yesterday "you needn't have done it". I never would've guessed it's said that way. Never encountered such sentences in any grammar rules.

"We didn't expect weather to be so bad"; The past tense describes an action which happened in the past.
"We hadn't expected weather to be so bad" ; The past perfect tense describes an action which happened before another action in the past, or before a stated time in the past.
So you might say, "we couldn't see and nearly went off the road on our trip to Georgia, we hadn't expected the weather to be so bad."
In this case you would be stressing the fact that you had not been expecting poor weather.

let me further elaborate on It really depends on the tense; here is an example I found that might help you.
1) Past Simple
I bought a car. -- I didn't buy a car. I had a car some time ago. -- I didn't have a car some time ago.
Passive A car was bought by me. -- A car wasn't bought by me.
2) Past Perfect Tense Before I passed to a college I had already bought a car. -- Before I passed to a college I hadn't already bought a car.
Before I passed to a college I had already had a car. -- Before I passed to a college I hadn't already had a car.
Passive A car had been bought by me before... -- A car hadn't been bought by me before...
So, the difference between hadn't and didn't is that they are used in different tenses and have different meaning. In this case the sentence.
