What's the difference between Nanjing and Nanking ?

They are both the same city. Nanking is the old way foreign people outside of China referred to Nanjing before official romanizations changed. The new romanizations are more similar to actual Chinese pronunciations. Nanjing has always been pronounced with a "j" sound instead of a "k" sound, but linguistic confusions in early romanization schemes led to common use of "nanking" in foreign language materials before the 1970's and 80's.
Peking and Beijing is also the same situation. Same city, different foreign spellings. Tientsin and Tianjin, Mao Tse-Tung and Mao Zedong as well. Old spelling versus new spelling.

I love hotpot, but recently I have been more into 烧烤, Chinese style barbecue.
Also there's a brand of beer I tried recently and imo is better than Tsingtao. It comes from Xinjiang of all places. It's called "Wusu" 乌苏, very good when combined with 羊肉 烤面筋 and other such delicacies. I'll show you the place.
