in my book 300 humans from a roman empire type civilisation are stranded in hell as the last survivors of the human race after an apocalypse. there are slaves, merchants, soldiers, etc and they have some meagre supplies of food, weapons and horses and they must learn to survive in this new world.

I'm not sure how to end the book or what the overall plot is going to be, I think the big reveal is going to be that they're not actually in hell but that a few members of a dying alien race have crash landed on earth and decided to turn the planet into their own plaything. or maybe it's better to never explain why they're there and just focus on a slowly dwindling group of people exploring a hellscape idk

Look to "The Mist" by Stephen King for inspiration, specifically the 2004 movie adaption of it. It features a portal to another dimension opening up followed by these horrific Lovecraftian creatures just offing the ensemble cast one by one in pretty brutal ways. The ending is also something that you could use for inspiration, but I won't spoil it.
