Per capita, not total. In China there are around 20 million dogs bred for consumption every year but there are over 1.4 billion people living in China.

How does one acquire bear meat in Canada? It is a regional specialty sold by small places that buy locally hunted animals or a more industrial process?
You can buy bear in Northern Japan, but I don't really know much about the commercial process.

With the exception of boar that has to be delivered alive to the slaughterhouse it is very illegal to in sell any wild game in America or Canada. If you're in North America and see wild game on a menu or store it is actually farm raised deer, bison, or elk. There is no farm raised bear obviously.
It varies by state an province based on a ton of factors but in my province you can hunt 2 black bears (without cubs) per year, one in spring and one in the autumn. 99% of the bears here are hunted using bait near a ground blind or treestand.
It can be hard to find a butcher willing to take on bear so it's best just to invest in some equipment and butcher your own meat.

That makes sense, most of the bears here are basically giant raccoons and just eat peoples garbage

1.) No demand for bear meat
2.) There shouldn't be any farm raised wild meat at all, it's a terrible practice as are their other form "canned" or high-fence hunts
3.) Bears are smart, agile, and possibly aggressive. The logistics of a bear ranch would be a nightmare
4.) People are often quite odd about predators/carnivores in general. Deer hunting for example has wide support by the general public, but when it comes to mountain lions, wolves, bears, etc, people tend to freak the fuck out and ignore scientific data in favour of muh feels

Well shit, that's not really enough to use for meat, or anything for that matter. In my state of New South Wales, you have to get a license to cull kangaroos and the like, a "license to harm native animals". With kangaroo culling, there is a limit per season but unlike Canada, we have more roos than people. There is also a license for commercial harvesting and processing. To be honest, our over reliance on cattle, chicken and sheep is a bit silly when we have an arguably healthier source of meat that literally breeds in pest proportions.
A good thing bears don't breed like roos, lel.

Beef

Moose meat if honestly the best, followed by deer. Caribou meat comes last. Never tried bear, despite the fact that I was asked to try it several times. I just can't.

2 bears is a lot of meat, throw in 1 or 2 deer, some moose meat, duck/geese/pheasants/quail/ptarmagin, snowshoe hare, squirrels, and any fish you catch, and you can eat meat every day of the year and still have a lot to give away to friends and family.
I completely agree that more people should be hunting and fishing and getting away from factory meats like beef/lamb/chicken. It's healthier and better for the environment.

The entire system is in dire need of reform as are people's eating habits.

It can carry additional and more easily transmitted diseases/parasites. I got trichinosis for example from bear meat. 99% of all trichinosis cases in North America are from black bear hunters. It used to be common in pork when pork was raised feral and could predate/scavenge but now it's basically gone from all pigs.
The meat just has to be cooked to a high temperature making it useless for steaks/chops or burgers although Jow Forums has given me the impression that Aussies like well-done meat and almost never eat rare or medium rare so it wouldn't apply to you. The meat is perfect for smoking, dehydrating, low and slow methods, etc.

I wouldn't mind eating bear meat knowing the individual was only eating berries during his lifetime(which is kinda delusional) but bears are scavengers and won't turn down a rotting pile of guts if it smells good enough for them. I will stick with moose meat, thank you.

No, there are no gators anywhere in Canada or even any lizards in my region, just tiny salamanders. I had gator tail once in Tennessee and thought it was very good though overpriced. We do have snakes but I never thought to eat one nor do I know of anyone who has, which is odd now that I think about it because I also like to try exotic meats.

Autumn bears are entirely berry, apple, and grass fed. They don't eat carrion that time of year, you can't even bait them with it. Bears have a worse sweet tooth than Americans and if they have a readily available source of sweet nutrition like wild blueberries and apples, you can't force feed them meat. (this is regional and specific to black bears, it's different out west and with brown bears)
Coastal bears are fishy
Spring/summer bears are eating a lot of summer kill and predating on fawns calves, and other woodland creatures, the meat can be quite bad in that case.

Meat is strongly influenced by what the animal is eating. If you have ever had grass fed beef instead of corn/cereal fed you will know this. It is especially true in predators. A coastal bear can taste like highly concentrated fish, a grass/fruit fed bear is delicious and even the fat is very good and can be rendered fir cooking and baking, a bear that has had a lot of meat/carrion in its diet has an unpleasent taste and odor, it's basically unpalatable unless you mask it behind stronger flavours like in a chili, the fat is completely out of the question as it tastes and smells like rotten ass.

You should try to find a place to eat them. The ones in Canada are probably completely different from the ones we have in Brazil (duh) - but I liked eating snake meat. It was very tender, whiteish and mellow - I imagined it'd taste "fishy" but that wasn't the case, but it depends on the snake, so I've been told. I've only eaten it once so I wouldn't know.

It sounds like you really don't like fat. To me, filet is overpriced and overrated. I like something like a ribeye because the fat makes it more delicious.

It's about twice as expensive as beef per pound, but prices have been slowly trickling down as it becomes more mainstream.
