Once you boil it enough the kernels become soft and get a decent flavor, in central Mexico people use a mineral salt called ''Tequesquite'' to make them taste a bit sweet but also a bit salty, in other regions i guess they use common salt.

For more complex dishes that use maize, people use aromatic herbs, salt, vegetal oil and meat (like chorizo) to enhance its flavor.
