By "eating so much" I mean so many calories.
Stop eating processed shit, fast food, etc and eat more fish, chicken, and vegetables. You can actually eat more food (by weight) but less calories. I eat something like 6lbs of food per day and it's only around 1500 calories.

That's true. I'm not going to say much genetics is why I'm fat but it's a huge factor in appetite, my dad is the same way but then my brother hardly thinks about food.

Losing weight (cutting) when you're overweight and especially gaining weight (bulking) when you're underweight are dead simple.
1) Figure out your TDEE (I use sailrabbit.com
2a) If you want to gain 1lb/week, add 500kcal per day
2b) If you want to lose 1lb/week, subtract 500kcal per day
It's pretty straight forward as long as you have the discipline to keep at it. There is so much calorie dense food on the market, it's takes effort to stay underweight.
Genetics plays a part in appetite but it still comes down to what you're eating. I can eat a pound of peanut butter (2600kcal) or a pound of chicken breast (785kcal) but the chicken breast will make me full much faster and for longer, leading to a loss of weight in the long run.
Beer is the devil. I try not to drink at all since I've lost so much weight. I don't want any impediments until I'm at my goal weight (another 20lbs or so)

While I ought to thank you for the information, I need to underline here that I'm not saying the concept isn't simple. Eating more or less really is a simple concept, and I'm familiar with TDEE and calorie surplus. Implementing changes in diet after a lifetime of conditioning to poor eating habits is, however, not simple. It is extremely fucking difficult. If it was easy then fatties and skellies would not exist, nobody WANTS to be an unhealthy weight, and almost everyone who is an unhealthy weight loathes themselves for it at some level. This isn't fucking Cosmo or a delusional day acceptance group, we know about calorie deficit and surplus. You're clearly being nice about this and I hope some people find this information useful, but I just want to reiterate that when I say it's not simple I mean it's not easy.

So I'm surprisingly at a somewhat healthy weight. I still need to get fit eventually though.

Two things fill you up: fiber and protein
Vegetables are decent sources for fiber. I eat about a pound of broccoli with dinner and I am satiated.
Fish and chicken are great sources for protein. They have some fat depending on the fish/cut of chicken, but not enough that it jumps the calories up like crazy. And they're really high in protein, so they fill you up.
Pic is what I eat on a typical day. I just switch out the chicken for fish 2x a week

Do you have a minifridge and microwave in your dorm room? You can always store yogurt, almonds, oatmeal, milk, etc in there and eat pretty healthy. Then do chicken + veg for dinner if you really have to eat at 2am and you have pans you can use.
Just push yourself to use the kitchen at earlier times. Start small if you have to. You're definitely capable of fetching a fucking yoghurt pot from the fridge at 7pm, even if you've somehow convinced yourself you can't. Nothing bad is going to happen, and even if you somehow drop spaghetti out your pockets nobody cares.

How are cheat days bullshit? I can definitely see how it could work for people who've lived without any diet control their whole lives. When ice cream for breakfast has been common for 20 years, people can forget how to enjoy ice cream occasionally in a healthy way. In that context cheat days make perfect sense as a way of introducing moderated consumption of less healthy food into an overall healthy diet, without applying unrealistic permanent restrictions.

It's like trying to quit smoking but still having a "cheat day" every once in awhile where you just smoke a pack of cigarettes.
You can have a maintenance day where you go in knowing you won't eat at a deficit, but you should still be eating good healthy food instead of garbage like pizza or fast food.
