Norwegian is more useful than Swedish. Even though fewer people speak it, it almost entirely overlaps with Swedish, requires fewer weird sounds to learn, and will help you the most in understanding the other Scandinavian languages as well. Also, Norwegian would be more exotic, since everyone expects Swedish when they think of Northern Europe.

Even if you make mistakes there's a good chance that the listener will still understand what you mean. Even if they don't get it you could always try and explain it in a different way. If you let the person know that you're still learning I'm sure they would help you if you get stuck. You have good pronunciation so I would go ahead and get out there if I were you, even if you don't feel confident.

what's a word bank and why is it bad

When you use Duolingo it gives you the option to see what the potential answers are. It's bad because instead of thinking about it and producing knowledge you can easily guess what the answer is, like multiple choice. The result is that you have a weak and passive understanding of the language.

You either know what words translate to or you don't

It's a list of words you can pick from as opposed to typing them, but retention is significantly poorer (you basically remember what the word sort of looks like rather than the word itself)

Basically, you understand but you can't produce.

If presented with 3 different words, you know wich word to chose, but you can't actively produces the word if it was not presented to you first. Does it make sense ?

I have news for you. It's possible to "kind of" know words based on context and the like, but if you were asked how to say something you would struggle to remember it.
Have you ever known a word but didn't know how to spell it, even though you've read it a bunch of times? It's kind of like that.

That's great. If I may have just two suggestions.

"Poszedłem z psem do parku." could work perfectly well, given proper context, but "Wyprowadziłem psa w parku." would be a direct, context-agnostic translation.

I'd also go with "Lato już prawie się skończyło, a nadal nie poszliśmy na plażę." as a slightly more natural expression, since the two sub-sentences are contrasted with each other.
