It's packed mixture and frozen so pieces are stuck. If you have time to melt it in pot and separate all those pieces be my guest. Though producer should be smart enough to put them in separate package so buyer doesn't need to do that shit.

Most producers of these vegetable mixes blanch the vegetables before cooking for different amount of times so that hard vegetables get soft and soft don't melt away.

well they do shit job and balancing blanch amount. i tried mixture from 5 different brands and carrots were always still raw while cauli and broc began overcooking

I had to eat those exact carrots for years in the Army. They're fucking awful.
And since they come water-logged in the cans, they never get cooked all the way and are always this soggy, floppy mess.

And Broccoli doesn't cook properly in an open skillet like that, you need a steamer.

Maybe, if they are old or if the package is opened or they are frozen more than once it can create ice crystals, then when they are cooked instead of frying they will basically boil and be shitty, same if you overcrowd the pan. Frozen are at least as good as fresh but you still have to know how to cook.
