Mandarin is an analytic language whereas Japanese is a polysynthetic language. Synthetic languages tend to sound better due to their structure alone.

As far as I can hear Chinese uses a lot of elongated 'o' and 'ah' sounds, which to westerners sounds nasally and non distinct gibberish.

I may be wrong but I believe in most if not all japanese words, vowels are always preceded and followed by a consonant, which to westerns make words sounds distinct from each other. It's also why Japanese people sound weird saying English words, since many of them have consonants clumped together. Hence

Jap: 'Seperingu'

yesterday i was waiting for a lad and 2 asians pased by talking to eachother. idk where they were from but unironically thought they were messing with me cause made the weirdest sounds like just vocals. something like Aai Ou Eo Au eo. it was hilarious.

That's because they largely ditch the tones when singing.
Vietnamese tones are fucking horrid, far worse than Mandarin. They tend to be a lot stronger and sharper. And Viets are always really fucking loud to boot.
