Before 1945 it was all the ones named after cities and typical Jewish professions. After 1945 high-ranking Jews started changing surnames to typical Polish ones in order to blend in with the population. I have one of the most common Polish surnames, I'm part ashkenazi and you wouldn't be able to tell.
