The most popular ones would be kebabs and maybe hot dogs, if we're talking strictly street food. Otherwise hot dogs are rare.

Depends on the area. Hot dogs and hamburgers are obviously the most common, but there are some regional specialties, like cheesesteak in Philadelphia.

In Canada (or at least Vancouver) there actually isn't much street food at all, and when there it would be burgers, not poutine. Can't say for sure how the rest of Canada is though.

There are good tacos across the country. the cdmx ones are just famous because of the high amount of Taquerías and varieties. You see pic related few meters away from each other, in downtown.

It mostly depends on the vendor rather than the city. Street food is always a hit and miss especially in places like NYC. I would expect it is mostly shit there. And overpriced? Oh yeah, no problem with that in NY.

It varies a lot, in many places it used to be up until very recently cenaduria fare aka fried anything (flautas, quesadillas, gorditas, etc) in Mexico City you'd be hard pressed to say whether in the "puestos blancos" tortas don't outnumber tacos, tho tamales are big for dinner and churros/pan dulce and coffee for breakfast.

Churros for breakfast is common here. In Summers, you can buy sea urchins or 'higos chumbos'; and in autumn, chestnuts. From time to time. you can see people selling optopus but no enymore.
Pastor is a Mexico city specialty tho, not only did they get started there but some (relatively recent) exceptions aside you can't really get decent pastor anywhere else, norteños in particular turn it into something more like pork adobada which is good but an entirely different thing

Tortilla de patatas isn't a street food though, unless you count eating tapas on a restaurant terrace street food. The only thing they sell in the streets around here are roasted chestnuts in winter, and I've seen a french inspired crepes food truck and another food truck who made sandwiches with local ingredients (pork, seafood etc) but that's about it
