But do we have the resources for that? Unfortunately they didn't have a writing system, and fragments of the language are only recorded by writers of other languages, mostly Romans, restricting what we know of it to personal names, city/river names etc (which we continue to use to this day but in heavily distorted form)
Would've definitely been nice if they were able to write down their own history, instead of second-hand reports who were always biased (of course Roman authors would describe our ancestors as "living in mudhuts" just to raise themselves /war propaganda)

We don't, unfortunately. The Gauls were easily Latinized, and although the language continued to be used(more and more sparsely) until the 7th century, it didn't survive because, as you said, it didn't have a writing system.

Doesn't the lower half of France ("Occitania") follow a pretty much Italian/Spanish culture? I mean yeah, as a left-Rhiner I feel culturally quite similar to the North-East quadrant of France (aside from obvious E-Lo, also Picardie, Champagne, parts of Burgundy), but I'd draw the line at around Dijon. South of that, Roman-style tile roofs start to dominate, the subtropical climate starts, and Lyon already feels more Italian to me
Oh and as to the NW quadrant (Bretagne, Normandie, Nantes, Loire...), those feel more Oceanic.-Insular-Celtic, closer to Britbong culture
Culturally and climate-wise the South is definitely closer to Spain and Italy than to the dark red area. Racially I'd say really intermediate. Respecting Lyon I'd agree it looks more med, they used to speak Occitan / Arpitan there. Pic related is in the South of Burgundy where I'd draw the border, like in OP's pic.

But yeah as I said while I think we're quite similar, we're not completely the same. For example I'm 1.90m, dark blonde and green-eyed, a common type here, while I imagine most of France to be predominantly dark brown hair, brown eyes and maybe 1.75-1.80, so somewhat closer in appearance to Spain and Italy
I'm from Champagne and I'm pretty sure most of people here have either blue or green eyes. I'd say something like 60%. Funnily enough the only two persons to have brown eyes in my family is my grandpa from Alsace and the husband of my sister who's half Breton half Spanish.
