Vienna, Moscow, Prague, Budapest and Munich are all great places. I wouldn't recommend you any southern Euro country (except Malta) since you already live in a warm climate.

You will be fine as long as you behave normal (ie. do not be loud, do not try to convince other people Islam is superior etc.). People might look at your mother out of curiosity because we are not used to see people wearing hijabs ,but nothing more. I'd recommend Kraków, Wrocław, Gdańsk and Warsaw for sure.

These reasons are so vague they can be applied to most Euro cities, not just the circle.
what about food? I personally don't care about halal food but my parents would care. Is it easy to find halal, vegan or kosher food in Poland? But we can probably pack some instant noodles on our own if halal food is not common.

Lot's of countries are nice, and pretty much all of them have their good and bad areas. Taking into consideration the different between a "cold" visit (citytrip) or a "warm" one (summer holiday), the best ones I've been:
Poland (Gdansk, Warsaw, Krakow)
Croatia (Dubrovnik)

Then I would recommend the cities I mentioned before. It would be much harder to get some vegan food in small cities (but still possible!). In all major cities there would be not a big deal to find a place with vegan food (not sure about kosher, that might be Waraw and Krakow). The advantage over western Europe we have is that we are way more cheaper, that includes accomodation, food and all other turist attractions. Just use Google to find nearest vegan/kosher place to eat. If you want to go and explore some nature then I would definiately recommend to pack some food with you.

Munich isn't HOT, it's probably like 16c today, which would be considered cold enough for a Majapahit.

but we don't look arab. I'm probably the brownest person in my family. my mom dad and sister are pretty pale, almost east asian pale.
Why visit just one?
Forget about anything halal that isn't a straight up vegan only restaurant. If it's a deal breaker, you want Western Europe since they actually have places that cater to the immigrant muslims. Here even it it's an Arab or Jewish restaurant, it's very unlikely to actually be kosher or halal.
