IDK. Mexican food is ok. I've noticed most of its appeal comes from basic stuff.
Corn tortilla has a distinct umami flavor, to that add grease and salt from the protein of the dish and balance it all with a vegetable high in water with a little sour touch (this comes from tomatoes, lemon, onions, chilli or salsa).
Mexican food is pretty balanced, yet simple, so I'd say that's where the appeal comes from.
