Estar implies it won't be forever, you're not always hungry or you're not always at a certain place, only exception is "estar muerto" being dead. Ser implies a sense of permanence to it, like who you are, whether you're tall, what you're like, etc.

No language is better. Things change because they change. Some langages function without verb tenses like Chinese, while others have a shitload. Some have a ton of grammatical cases and other function with prepositions instead. Whereas english subjunctive is more cumbersome. It can be the verb in past tense, in present tense, in infinitive (to + verb) or in -ing ending, depending on the structure of the sentence.
