I think the most preserved site is Teotihuacan. Mayan sites didn't get destroyed, but being abandoned hundreds of years in the middle of the jungle didn't went well for them
Theotihuacan seems the coolest. Even conquistadores in their letters describe it as an incredible place

There are several sites that are somewhat well preserved tho ofc you wouldn't find anything close to its original state, much the same as with the white marble look of some Classical antiquity remains in MENA and Europe, the current look of Mesoamerican ruins is missing that outer layer of colorful paint and finish that was in the original.
Best place to visit is Mexico City as you can see two museums; MUNAH which is the biggest collection of Mesoamerican artifacts, including some of the more famous ones like the sun stone, and is well divided as to provide an overview of the different cultures, and Templo Mayor, which is the onsite museum on the Aztec main temple, you get to visit Xochimilco, which memes aside does give you an idea of the lake environment the Aztecs lived in and Teotihuacan (seat of its own civilization) is close by, it's a one day visit from Mexico City. Then you can move from there as a base to visit Tula (Toltec) Monte Albán (Zapotec) El Tajín (Totonac) and Tzintzuntzan (Tarascan) as 2-3 day trips each, then go south and stop in Tabasco to see La Venta (Olmec) and do the Mayan circuit with say Chichen Itza, Palenque and Tikal (this last one in Guatemala) being the more visited sites.
Ofc I wouldn't expect you to do all that but you can tailor to your preferences, there's literal hundreds of sites tho it's only a couple of dozen where you'll see large relatively well preserved cities.

The Mayans are still around so if you want to met some indigenous peoples, I recommend Yucatan.
Guatemala. If you have time go to El Mirador. The largest pyramid in the world is there. Recently causways have been discovered that are as large as super highways that connect to neighboring cities. It is a a three day hike through the jungle to get there.

La dante is 330 meters across and 75 meters high. Cholula is 450 meters by 66 meters.
It is worth seeing though. I know Hansen and other archeologist working the site. They have uncovered some amazing stuff. Just the trip through the jungle is amazing. You see signs of ancient human habitation everywhere. Millions lived there thousands of years ago.
I'll agree with you on that, the site is certainly impressive and well worth a visit
