It /totally/ breaks away at the moment of the flippening, because at that moment it becomes dominant.
But actually, in practice, the breaking-away process will begin before that moment: it will happen when lots of people realize that BCH is going up faster than BTC (and they therefore convert their BTC into BCH, and the majority of investors buy BCH instead of BTC).
We've already witnessed that after a BTC crash; after its price levels out and begins going up, BCH goes up much more (in percentage) than BTC. This will repeat after each crash: BTC goes down > levels out > goes up a little > BCH goes up more in comparison > BTC goes down again > BCH goes down also, but not as much as the previous time (higher lows), and when BTC goes up again, BCH once again goes up more in comparison. This repeating over and over again eventually and inevitably leads to BCH overtaking BTC.
