It used to be a tradition for people to dress up in goat costumes and act a bit rowdy and playful in exchange for food and shit. Then the traditions shifted so the goat started giving the gifts instead, which eventually led to it being replaced by a more generic Santa/gnome.
Though the goat motif still remains a bit part within the Christmas lore. Possibly because we had a tradition of slaughtering a goat around this time.
