Foreigners wouldn't have a caste, I'd imagine, or they'd get treated based upon what they'd do, not like Dalits. Most Foreigners were Turkic invaders and mercenaries, so I'd imagine they'd get treated as Kshatriyas(pretty well), and Europeans would probably get treated like Brahmins on account of being fair skinned

Basically, Hinduism wasn't a single entity and would vary from place to place greatly due to different customs, practices, etc.
The application of the caste system would also vary under different kings.
For example, Chatrapathi Shivaji (Chatrapathi was a title meaning - Shielder of all) was a legendary king who basically formed the basis for the modern day Indian state of Maharashtra and struggled hard to make his dream of having an independent Maratha (his ethnicity) state while India was being ruled by Sultanates and Mughals.

Shivaji believed merit to be above all and felt that titles and birthrights were meaningless unless you had the merit to prove yourself. Hence, during his rule (as well as the rule of the Marathas that came after him) castes and nobility were seen as less important and if you embodied what it meant to be a warrior/administrator, etc you would get what you deserved. Hence, several people of non Kshatriya (warrior caste) heritage under his rule would rise up to high ranks under his army, even eventually be granted their own fortress.
This mentality of "merit above all" and the fact that the Marathas didn't discriminate based on the basis of caste or religion was why they were able to establish one of the biggest empires in India (aside from Mutual Empire and Maurya Empire) while also managing to stay relatively stable.

Marathas are an ethnolinguistic group that speak in the language of Marathi.
Its difficult to explain but within Maharashtra/in Marathi context, "Maratha" mostly referred to the dominant Kshatriya/Warrior class and "Marathi" was the term designation for the entire ethnicity but outside of the region others used the two terms interchangeably and Maratha was seen as synonymous with Marathi.
So depends on the context of usage, I guess.
Historically, the ethnicity consisted of artisans, farmers/peasants/cultivators, merchants/landowners as well as warriors/soldiers.
