Russian is a lot easier than you think because of all the resources available to learn. I would say Russian or German. Italian is useless unless you want to work or live in italy.

I learned basic arabic and japanese this year (a1 and a2 content maybe a bit of b1) both were easier than what I expected so russian shouldnt be hard at all. Language difficulty is just a meme. If you really care about learning something nothing will stop you.

I've read Calvino, Eco, Wu Ming. Still doesn't hold up to Russian literature. Open to recommendations.

Aside from the aforementioned, Foscolo, Manzoni, Leopardi, Pascoli, D'Annunzio, Pirandello are all solid choices. In general, I think our poetry is superior to our prose. The problem, with pre-XX century poetry, is actually interpreting it.
