20 gauge = .62 caliber = .62 of an inch

The gauge or "bore" number of 20 comes from how many round balls of lead could be formed from 1 pound of lead.

Back in the days of muskets bullets were just lead balls. 1 pound of lead could make 12 balls for a .72 caliber musket.

How do the Brits prepare their pheasant?

12 gauge means you can make 12 identical lead balls out of 1lbs of lead, and each ball will be the diameter of the barrel. The bigger the number, the smaller the diameter of the shotgun's barrel.

I've never even heard of a 28 gauge shotgun. 12 gauge, 20 gauge, and rarely a .410 gauge are all I've ever seen in the US.

28 is more popular in Europe these days. If you are familiar with the 11/16 oz shot load for .410 well that was the standard 28 gauge load.

I use .410 for everything, even smaller deer, but I've always thought 28 would be the ideal gauge for me.

I thought it was a common activity there for some reason, here it's mostly people who live on farms that hunt to complement their diet, not so much in a sports manner, fishing on the other side is a very well spread activity, I do fish a lot during trout season

If it's the former, they are raised in outdoor pens at specialist game rearing sites, then released to the shoot as adults and fed unlimited amounts of corn at ground level from large feeders.

If you mean to eat, hang for 6-7 days then pluck & gut for roasting fresh, or hang for 2-3 days, then butcher for freezing.

I live in the country and get free pheasant all the time at this time of year. The wealthy twits used send their lackeys out to protect the flock from poaching. The English Bullmastiff was bred specifically to do this - now the beaters & gamekeepers at the shoots get a load of the bag as most of the shooting crowd are just larping as rustic types and are too urbanised to gut or butcher what they shot afterwards.
