Is there a distinction between people who consume mostly shounen anime/manga and the people who consume mostly seinen anime/manga? Something like "shouneners" or "seineners" or "seinen-lovers"? Or people don't differentiate the two?
"Seinen" means the same sort of thing as "Young Adult". Everyone knows that "Young Adult" fiction is for teenagers and maybe those in their early twenties; it's not actually for adults.

You will probably have better luck choosing by subject matter rather than according demographic labelling. Realistic history or politics, romance/drama between adults, gambling, are more likely to be targeted to actual adults, but often enough it's not very specific.
As far as I understand things, "shounen" has furigana, and "seinen" doesn't. That's the main objective distinction. But that doesn't mean that adults (if they read comics) don't read or enjoy both.
