Race is basically a meme. It's never been a significant mark of identity except in America and other Western colonial societies, and even then intra-racial cleavages (hatred toward Irish, Jews, Italians) have been incredibly significant.
On a genetic level there's obviously big differences between different groups of people, but racial categories aren't a great way to look at them. Dark skinned African people contain within them so much genetic diversity that it doesn't make sense to considered smaller categories like "white" or "Native American" to be comparable to "black".

Anyways to answer you OP, europeans don’t tend to go by “white” like Americans do. Europeans tend to see themselves by their ethnicity instead. For instance in Sweden, Italians and south Eastern Europeans were (and still are to some degree especially the latter) were looked down upon and essentially seen as “non-whites” in a way, but only because they were non-Nordic.
Secondly people don’t instantly like it each other because they’re both white lmao, people were still pissed off about the whole WW2 thing and regular people disliked the Germans for that. In France they publicly shamed women who married Germans.
