I managed to count calories for a couple months, with mild success, but it gets tiring. It's annoying as shit to have to meticulously list every ingredient when cooking, or even when you eat at a restaurant or something and you have to find every item in your dish.

It's easy. You just find out your BMR (Basal Metabolic Rate) and don't exceed it, don't even need to exercice. You will reach a plateau at which point you need to add some physical activity. Also use little tricks, like coffee to speed up your metabolism and eating frequently but smaller portions so that you don't feel hungry even with low calorie diet. The hardest part is the will to go through it for a couple of months.
