Yes they do speak literally Hochdeutsch (standard german) natively. To me it's kind of like a language i've learnt in school, a bit like english. I can speak it but my accent and certain words will still come through. At this point i'd say i can get to the point better in english than i can in standard german

Fascinating. I will never be able to understand this. I read some interesting stuff about dialects. It seems like politicians, for example, can vary 'their 'dialect mode' and make it weaker or stronger depending on the situation and who they are talking to.

Politicians usually always speak standard german for some reason, even when talking to their native population, at least here. My dialect and standard german, i think, is somewhat relatable to norwegian and swedish. You don't understand eachother at first, but if you immerse yourself you'll have a pretty good understanding after a few weeks/months. From the perspective of germans at least, after all I learnt standard german at school.
All of it, but as far as I know that's Züridütsch (Zürich german) and they're quite a few steps above the other swiss german dialects in terms of guttural sounds.
