most europeans go to antalya or mugla but if you ever decide to see some of the aegean coast make sure to drink some raki with some good meze and fish in a small restaurant around ayvalık
no reason to visit ankara really besides the mausoleum of ataturk
istanbul is nice but around ayyrabs don't relax
the east has some nice stuff esp. around diyarbakır but excercise above normal caution
if you have any turkish friends who aren't istanbul snobs you can try doing a food tour as well, I recommend it

If you're vegetarian then Punjab and places like Rajasthan are ideal for you
If you're inclined in beef and meaty food then west Bengal and kerala is for you
Rest of the india has it's own food variants
North , south and east india has COMPLETELY different foods and are unique to it's region

So is the US. They have everything we have and more in terms of landscape, and their cities are more interesting. The only exception maybe is the northern tundra, but that is definitely a niche thing and I doubt many tourists go there.
