It doesn't taste like chicken at all, to me. If I had to compare it to something that would be familiar to the rest of the board, I'd say it's more like lean pork than chicken. It's different though. Definitely recommended.

Why would you be wary of alligator meat, Marius?

I've only had it ground but it was pretty weird. It's pink like pork but tastes sort of fishy and bright.

I fucked up and ordered Gator Gumbo, i wanted to try both gumbo and alligator i regret it, since in the taste of the gator was lost on the gumbo. It was nice, would eat it again, but i feel like gator should be eaten first roasted and not on stew. I did tried gator jerky but it was meh.

Jerkey in general isn't a good way to sample a meat in my opinion. I mean it's okay but fresh it's always better.

I'm going to guess that there just aren't many suitable places to farm them, combined with sort of niche interest, but I agree, it would be nice to see more widely available.
