most snails are cooked before being eaten and even when its raw or alive it still isn't that disgusting because they are usually kept in conditions where they wouldn't get any diseases

Both are molluscs, there's no difference except oysters are eaten raw.
Now this is a good question. I guess the sauce plays well with their natural flavour. Either way ut's a delicious dish.
