meat is pretty flexible and im not really picky. i mean, ive eaten taos with super super well done skirt steak that is seasoned to high heaven and it is deliciou, but if you're going for a nice juicy steak and eating it just to appreciate the taste of the meat alone all by itself and savvor it, then medium rare is the best cook for that. if youre eating steak and it gets way over cooked, then you can start using dipping sauces for it and it's all dandy.
