and Canarian Spanish because the islands were overcrowded so a lot of Canarians became sailors, conquistadors or colonists.
And as you would expect, Canarian and Sevillan Spanish have seseo, like the Latin American varieties.

Well, it's complicated.
For example plaza was written plaça and pronounced platsa, cielo was pronounced tsielo. We decided to change the TS for θ while Latin Americans and some spaniards chose the S.
México was Méshico instead of Méjico, just like Quijote was pronounced Quishote by Cervantes.
Latin Americans and some spaniards took the J sound but dismissed the S/θ change. Who is in the wrong? Hard to say.
