The least meme answer would be that, since the north isn't a fucking desert, the whole region is full of smallholdings unlike the south, wich has large estates. This means that in the south were less owners and much more illiterate smallfolk while in the north there were more owners that just weren't that rich.
Also, in Galicia, catholic priests were more powerful than in any other region of Iberia. There was one bishop called Cresconio who led the noblemen army against the danish viking raiders and kicked them out of the northern shores.

If British spoke Spanish without accent you'd be welcome without being seen as foreigner my brother :)
